Tasting Notes
Citrine color. Fruity, reminiscent of stone fruit and citrus, notes of linden and slight mineral. Fine and persistent bubble. Balanced palate, refreshing acidity , enveloping, with a long and harmonious finish.
Vinification
The grapes are harvested by hand and destemmed, and then gently pressed. After cold defecation, the must is inoculated with selected yeasts, and alcoholic fermentation takes place for 15 to 20 days at a temperature of 14-16 ºC. The 2nd fermentation takes place by the classic method, in a cellar at a controlled temperature of 14 ºC where it remains in age for at least 12 months.
