With its beauty, refinement and typicality, Marqués de Riscal Limousin represents the most striking qualities of the Verdejo grape, famous for its fragrance, fresh acidity and ageing potential.
Tasting Notes
Pale golden-coloured wine, complex and elegant. In the mouth it is soft with a good base of fine lees, dried fruits and notes of toasted wood. This wine goes well with fish with sauce, white meats, even with sauces with a low flavor, roast lamb, grilled vegetables and legume dishes.
Vinification
The harvest is done manually in boxes of 15 kilos for subsequent pressing of the whole grape, without crushing, after passing through a two-stage sorting table for the selection of the bunches and whole berries. In this way, the oxidation of the must is reduced to a minimum and all the aromas, colour and freshness, typical of this variety, are preserved. After light bonding of the must, fermentation takes place in 600-liter vats of French oak from 3 origins: Allier, Nevers and Vosges, followed by a stage on lees that can last about 6 months. Weekly bâtonnage or stirring of the lees during the first 3 months and thereafter depending on the evolution of the aging process.
