Tasting Notes
Straw yellow color. Aroma of citrus peel, dried flowers, light toast, butter biscuit, and beeswax, among other aromatic notes of rich and complex palette. It has very fresh attack, and excellent texture. The mousse is creamy and has good gustatory persistence.
Vinification
After a very delicate pressing of the grapes, harvested between mid-August and the first days of September, the must fermented for 16 days in stainless steel vats at controlled temperature. The elaboration, following the classic method, began at the beginning of April 2016 with the draught with free yeasts, and the refermentation took place in the cellar for 26 days at 15 ºC
