Vinification
The harvest is done by hand and the grapes are transported to the winery in small boxes. After destemming, the grapes are crushed into stainless steel tanks, where fermentation takes place at controlled temperature over 6 days where the seeds are always at the bottom of the tank without mixing with wine. The maceration takes place in a delicate way to enhance all the typicity of this native variety, privileging the extraction of fresh fruit and tannins.
The malolactic fermentation took place mainly in the semi-new French oak barrels where it also aged for 1 year. It then went through a new stage in stainless steel tanks for another winter, privileging only natural stabilization before bottling. A slight clarification is made with an agent of vegetable origin. Before bottling, a slight filtration is carried out in order to maintain all its aromatic potential and structure. Small sediments may appear during the aging in the bottle. It does not contain animal products.
Tasting Notes
Evident fruity and floral character, very delicate and typical of the variety. Violet-like floral aromas and notes of very ripe red and black fruit predominate, some sweet notes, which helped the ageing in semi-new wood, which concentrated the wine, thus becoming more voluminous and round. Voluminous wine with good structure. Persistent finish where the complexity of aromas, minerality and freshness stand out.
