Vinification
The harvest is done by hand and the grapes are transported to the winery in small boxes. This is followed by pressing of the whole grapes in a press and decanting in a cold stainless steel tank. Then, the completely cleaned wort is transferred to other stainless steel tanks where it will start fermenting at a controlled temperature of around 15ºC. At the end of the alcoholic fermentation, the wine is kept in the vats with only the fine lees for another 5 months with batonnage. Before bottling it is racked and has only natural stabilization and a slight clarification using products of mineral origin in order to maintain all its aromatic potential and structure. It does not contain animal products.
Tasting Notes
Wine with a very fresh aroma and palate, with intense mouth aromas, very fruity and typical. Some floral, minty and citrus notes. In the mouth it is soft, with structure and a fresh finish. It emphasizes acidity and minerality in balance with volume. Some salty notes typical of the grape variety in granitic soils.
