Vinification
Grapes from two small plots of old vines of 65 and 93 years, with very low yields (about 1500 Kg/ha). Pressing of whole bunches, cold decanting and fermentation with controlled temperature between 17-19ºC. Fermentation and aging of the wine in barrels for 14 months. 45% in stainless steel barrels, 40% in used French oak barrels and 15% in new French oak barrels.
Tasting Notes
With a bright citrus color, intense floral aroma typical of the variety with notes of ripe fruit and light spices. In the mouth it is a full-bodied, balanced wine with an intense and long finish. It goes well with oven-roasted fish dishes and cured cheeses. Serve at a temperature of 12-14ºC.
