From the Latin clandestinus. On the sly; done on the sly; without anyone knowing; hidden; that is contrary to laws or morals. Planted in the open air and in the heart of the Dão, the grapes that embody this Clandestino have a distant origin. Made in a complicit way, by all those who harvested and worked them, this wine turns out to be fresh, greedy, enigmatic and even – say the evil tongues – immoral.
Tasting Notes
By having the two grape varieties that make up the batch fermented together, a superior integration of their particular qualities was promoted. One of the grape varieties is known for its chromatic and aromatic intensity, the other, quite the opposite, is known for its discreet color and restrained, austere aromas, which gives rise to a wine with the best of both worlds. The aromatic exuberance of one, with its shades of red and black fruits, is tempered by the fineness and freshness of the other variety, with its soft aromas, where black cherry and dark chocolate, pepper and a refreshing minerality stand out. Elegance and harmony are two striking characteristics, which are evident in the mouth, where the freshness and quality of the soft tannins contribute to a whole, admittedly clandestine in this region, but owing its identity!
Harmonization
Roasted codfish, octopus à lagareiro, roast beef, Alentejo pork. It should be served at a temperature between 14 and 16ºC.
