Vineyards
At the top of Haut Barsac, bordered by Crus Classés in 1855, Doisy Daëne is located on the clay-limestone plateau. This geological exception on the left bank has contributed to making the village of Barsac and its wines famous all over the world. With an area of 10 hectares of Sauvignon blanc intended for the production of dry white wines produced exclusively in the commune of Barsac. The vines are more than 50 years old.
In the Barsac terroir, Doisy Daëne produces both a Grand Vin de Sauternes and a cheeky and very original dry white Bordeaux, the Grand Vin Sec du Château Doisy Daëne.
Vinification
Manual collection by successive lots. Fermentation is done in barrels, thus separating the harvest of each grape variety and each plot. A pre-assembly is carried out 3 months after harvest. Ageing is also carried out in barrels with an average duration of 12 months.
