Vinification
The fruits were harvested by hand, 25% of which were kept in whole bunches in the fermentation process with wild yeast. It was transferred to second- and third-pass French oak barrels and casks to ensure that the flavor and structure of the fruit were dominant in the wine.
Tasting Notes
This wine presents an elegant expression of rich black fruits, with earthy notes, anise, spicy and savory oak, ending with a taut spine and a long and fluid tannin structure.
