Health Benefits
Lemon balm has been used since the Middle Ages, with a view to a variety of health benefits, including treating indigestion, nausea, and even wounds. It has gained popularity as a means of reducing anxiety and stress, improving mood and cognitive function, and also aiding in relaxation and sleep.
Culinary use
Lemon balm is a great addition to a variety of dishes. Add it to biscuits and bread, or to salads and soups, for a refreshing lemon flavour. This herb can replace lemon peel in some recipes and even makes a great pesto.
What the process looks like
The plants are grown organically in the nursery and selected from the best-adapted cultivars. Harvesting is done manually near the flowering period of the plant cycle (when the concentration of essential oils is highest). The leaves are dehydrated at low temperatures, never exceeding 25°C. The best leaves are selected by hand.
How do you prepare?
Mix the sachet of lemon balm leaves with water at 80°C in a container of your choice (strainer, teapot, or even directly in the cup). Let the leaves rest for 4-6 minutes, depending on how concentrated you like the infusion. Lemon balm is a more delicate herb, so we recommend a shorter infusion time than usual, at a slightly lower temperature.
