Origin
The production area of CARM olive oils is located in the heart of the Douro Superior – the Douro Superior – considered the birthplace of the best “letter A” Port wine vineyards. Here we can still find traces of Roman culture dating back to the second century B.C., as well as traces left by the Arabs dating back to between the seventh and eleventh centuries.
CARM’s olive groves are located in the heart of this area that surrounds the village of Almendra. This is one of the areas in Portugal with the best natural characteristics for the production of olive oil with high quality standards resulting from the specificity of the very poor schist soils, the exposure of the olive groves to a dry climate with extreme temperatures between summer and winter. The olive groves are located between 150 and 450 meters above sea level. For the production of the “Classic” CARM olive oil we have selected the best of the Cobrançosa, Madural, Negrinha and Verdeal olive varieties.
Production
CARM’s “Classic” olive oil comes from CARM’s own olive groves, which are not included in the PDO Trás-os-Montes e Alto Douro – Protected Designation of Origin (Protected Designation of Origin) but are located in the heart of the Douro, a demarcated region for table and Port wines.
All farms that cultivate olives for the production of “Classic” CARM are located in the DOP of Trás-os-Montes and Alto Douro olive oils. Here AOTAD supervises and controls all olive oil certifiers, in accordance with EEC rules, through tests carried out by a group of certified evaluators
Harvesting and Extraction
The olive harvest is done through mechanical vibration. Harvesting takes place between early and mid-November and never after New Year’s. The extraction is carried out in a continuous cold process using an ecological two-phase decanter.
Tasting Notes
Fruity ripe but fresh, both on the nose and in the mouth. Strong aroma of fresh olives, apple and tomato with a finish with slight nuances of dried fruits and pepper.
